Prego is dependable. An old faithful. Where shall we go for dinner, you ask. Where do you take someone for a business lunch, or your parents, or an acquaintance you’ve yet to gauge? Prego. While its decor is reminiscent of something slightly more suburban, the food is well, dependable. Dependably good. The pizzas are thick based and wood fired. The pasta is tasty. Highlights include a very good Vitello Tonnato ($22.50), an entrée of seared tuna and  roasted veal sliced delicately thin. It is smeared with tuna mayonnaise and crispy, salty capers. The fish of the day, more often than not, is served on risotto. It’s always fresh and simply cooked. The menu strays little from tradition, but what is done is done well without the over flourish or experimentation that is the death of a restaurant like this. Service, impeccable; the wine list, lengthy enough.
